Differentiating Instruction With Menus Grades 6-8 - Math
This is the best resource I have seen for menus. The topics are appropriate for middle school students. The products the students have to select from appeal to a variety of learning styles. 

The book is set up in such a way that all you need to do is select a topic, view the choices of menus and copy! 

The book also includes descriptions that students can refer to for guidelines as to what is to be included for each project.
